English Roast Dinner

This recipe feeds two adults with quite a hefty appetite. There is always a lot of chicken left overs, but if making this meal for more than two, increase the vegetable portions.
  • Whole Chicken
  • 3 Carrots
  • 1 Onion
  • 1 Lemon
  • 3 Garlic cloves
  • 3 Large Red Potatoes
  • 1T of butter
  • 1 Cup of milk
  • 3T of sour cream (optional)
  • 1 Crown of broccoli
  • 2 Cups of frozen green peas
  1. Roast Chicken & Veggies Recipe Instructions
  2. Preheat the oven to 425 degrees
  3. Roughly cut the onions and carrots and place at the bottom of a baking pan. Drizzle olive oil and salt and pepper on top.
  4. Rinse the whole chicken inside and out and then dry. Drizzle olive oil and juice of one lemon over the chicken. After squeezed, place the lemon inside the chicken with 3 cloves of garlic. Salt and pepper the outside of the chicken very liberally.
  5. Place the chicken on top of the onions and carrots in the baking pan and then place in the oven for 1.5 hours or until the juices run clear.
  6. Once the chicken is completely cooked, remove it and the veggies from the baking dish.
  7. Gravy Instructions
  8. With the remaining juices in the baking dish, ladle half a cup of the juices into a separate bowl.
  9. Add 1 tablespoon of flour to the cup of juices and whisk with until the flour has dissolved.
  10. Add the flour mixture back to the baking dish and whisk together.
  11. Turn off the oven, and then place the baking dish back into the over for the gravy to start thickening up. After about 10 minutes, the gravy will be warm, thick and ready to pour!
  12. Red Mashed Potatoes Instructions
  13. Roughly chop potatoes, and boil the potatoes until fork tender.
  14. Drain the potatoes, add 1 tablespoon of butter, milk, sour cream and mash to the consistency of your liking. Salt and pepper to taste.
  15. Brocoli Instructions
  16. Boil brocoli until bright green (no one likes mushy brocoli so stop cooking when it is just fork tender)
  17. Easy PEAsy Instructions
  18. Right before serving, heat up those frozen peas in the microwave.
